Today is Pi Day, the day we celebrate the seemingly endless number that represents the ratio between any Euclidean circle's circumference and diameter. Since Pi refers to a circle, we can celebrate by baking (and feasting upon) pies of all kinds!
Pumpkin is my all-time favorite, although there are others that are right up there with it. Deep-dish apple with crumbly top; key lime; chocolate creme, and tomato pies are equally delicious. You may be wondering about tomato pie being included with a row of sweets. Well, tomato pie, while not a dessert, is a favorite of mine, especially at lunchtime!
Tomato pie is made by using a single pie crust, then layering slices of tomatoes in a spiral/circular pattern, one overlapping the former, until the bottom of the pie shell is covered. A layer of mozzarella cheese and italian seasonings is added, then another layer of tomato slices. This repeats until the entire depth of the pie has been filled. The top is covered with torn slices of mozzarella cheese, italian seasoning, and a spinkle of galic powder, if you wish.
Bake this pie in a preheated oven at 350 degrees until the cheese is melted and the pie shell rim is golden brown, approximately 20 minutes. Serve while warm!
